Autumn Treats


Autumn in New England is beautiful - the fall foliage, the crisp days and.... the pumpkins! Today I am sharing with you my illustration "Autumn Treats" and a delicious recipe for Pumpkin Spice Sugar Cookies.YUM!

Pumpkin Spice Sugar Cookies (makes aprox. 3 dozen)
3/4 cup unsalted butter, softened
3/4 cup brown sugar (packed)
1/2 cup pumpkin puree
1 egg
1 teaspoon vanilla extract
1 tablespoon orange zest
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 1/4 cups flour
1 cup of wheat flour
1/2 tsp salt

In a medium bowl, cream the butter, brown sugar, and orange zest. Stir in the pumpkin. Add the egg and vanilla, mix well. Sift together the flour, cinnamon, ginger, nutmeg, and salt; stir into the pumpkin dough mixture. Chill dough for 1 hour.
Preheat oven to 375 degrees F (190 degrees C).
On a lightly floured surface, roll out the dough to 1/8 inch thickness. Use cookies cutters ( I recommend a pumpkin shape) to cut out and place onto a cookie sheet lined with parchment paper. Bake for 10 to 12 minutes in the preheated oven. Allow to cool and then decorate with royal frosting.

NOTE: I like to combine flours, but you can use all-purpose flour for the entire recipe if you don't have wheat flour. Pumpkin pie spice can also be used in place of the cinnamon, nutmeg and ginger.
